CELLADOR ALES
Join us Thursday night as we kick SDBW off a day early with our T!T! debut of Cellador Ales. Cellador is a 100% oak-barrel fermented mixed-culture brewery and blendery focused on the creation of sour and wild beers.
Doors open at 5pm
ON TAP:
Akimbo Blend 2
Table sour aged in fresh Chardonnay barrels with whole organic Masumoto Gold Dust Peaches, then dry hopped with Nelson Sauvin.  4.2%
Apricot Atavism
Blend of barrel aged wild ales with spent organic apricots. Tart and balanced with a good amount of brett funk.  5.5%
Berlinerish Blueberry
Barrel fermented Brett berliner aged on whole organic Blueberries. 4.5%
Saison du Rosier
Our first "clean" beer. A Saison inspired by Dupont, fermented with the Bottleg Biology Saison Parfait strain. Fermented in an oak wine barrel for 12 weeks. 6.5%
La Ruche Sage
A rustic Saison fermented in oak barrels with our house culture and 35lbs per barrel of local Sage Honey. 8.8%

Join Ryan Fields, Head Brewer and Blender, on the back patio to taste through a selection of drafts from The Blendery as Ryan talks about The Blendery, the beers and the process.

Ryan Fields is an exceptionally talented and creative brewer whose working knowledge of brewing comes from his time spent with some of California’s most acclaimed breweries. Ryan’s introduction to brewing began at Lost Abbey in San Diego, where he was able to work with one of the nation’s most prolific barrel programs. Under the tutelage of Tomme Arthur and crew, Ryan went on to develop a great understanding of funky, sour beers. After four years with Port Brewing / Lost Abbey, Ryan took the position of Head Brewer for Pizza Port San Clemente. It was here that Ryan started to not only perfect his craft of brewing, but also experiment with his own small barrel program. In 2014 Ryan joined the Beachwood Blendery project to become the Head Brewer and Blender, and the match couldn’t be any more perfect. Alongside his practical experience, Ryan brings with him a degree in physics, an intimate understanding of yeast and bacteria and his mighty banjo.

Indeed, Jeffers Richardson director of Firestone Walkers Barrelworks wild beer facilityis taking his trailblazing educational show on the road this fall under the banner of Jeffers Drops AcidKnowledge, inviting you to explore how acidity shapes your sensory perception of wild beers.
The seminar delves into the differences between pH and titratable acidity as well as the sensory relationship between smell and taste. Different concentrations of acetic and lactic acids are tasted, enabling you to discover the signature characteristics of each. Along the way, you learn how each of these acids shapes flavor, mouthfeel and overall perception.
